A rustic flatbread made without yeast, baked in a glowing cast-iron skillet. Badgers are impatient fellows with surly dispositions. Ingredients from the pantry and garden:
2 cups fine wheat flour
1 teaspoon leavening salt (cream of tartar baking powder)
1 teaspoon fine rock salt
¾ cup lukewarm spring water
2 tablespoons melted butter (or good vegetable oil)
200 g rich country-style quark (or thick yogurt)
1 bunch fresh chives and parsley (finely chopped)
4 crisp radishes (sliced paper-thin)
Preparation:
Mixing the dough:
Take an earthenware bowl and mix the flour, leavening salt, and salt inside. Pour in the lukewarm water and melted butter. Stir vigorously with a wooden spoon until the ingredients come together into a rough, lumpy dough.
Kneading:
Sprinkle a handful of flour onto the wooden tabletop. Turn the dough out onto it and knead it with vigorous strokes of your paws for about two minutes, until it becomes smooth and pliable. Then, divide the loaf into four equal-sized balls and press them flat into round discs.
